Masaledar Baghare Baingan recipe by Sanjeev kapoor.

Ingredients of Baghare Baingan!

Ingredients 250 grams Baingan, cut into 1 inch pieces,1 tablespoon coriander seeds,1 tablespoon sesame seeds ,1 tablespoon fenugreek seeds,2 tablespoon peanuts,3/4 poppy seeds,1/2 tablespoon cumin seeds (jeera) 2 tablespoons oil, 1 tablespoon grated coconut, chopped ginger , 6-8 chopped garlic, 2-3 green chillies, roughly chopped 2 medium onion pieces,1/2 grated jaggery, 1/2 teaspoon red chilli powder, pinch of turmeric powder. Add Salt to taste.


1. Take and Heat a non-stick pan. Add onion and sauté till golden brown keep it aside.

2. Add cumin seeds and sauté till the seeds change color, Add coriander seeds,1 tablespoon sesame seeds,  fenugreek seed then add peanuts, poppy seeds, add dry grated coconut, Add garlic and green chilies and sauté till fragrant. Add chili powder, add jaggery, add turmeric powder mix together.

3. Put this mixture and add some water in the grinder then grind to a fine puree.

4. Add 2 tablespoon of tamarind pulp and add salt according to taste.

5 Fill began with the paste.

6 Heat an oil in the kadai add curry leaves and put the  Baingan then mix it well, cover it for 10 min.

7 Switch off heat and serve hot began with roti.
